Lunch for the family

Our two girls love soup. I relied on them heavily as an easy lunch while I was on maternity leave with the two; it didn’t require much thought or attention but was a healthy lunch for myself and the toddler. I made this (lightly!) spiced carrot soup recently and my toddler told me it was ‘delicious’. The smallest lady had her beak open for it too so I thought it might be a useful, easy lunch idea to share! I’ve made a similar version of this with parsnips and the girls loved that too.

Ingredients

  • 500g carrots, peeled and chopped into small pieces

  • 1 pint chicken or vegetable stock (Now that Cara is one I use abou half a stock cube in a pint of water)

  • 1 clove of garlic

  • 1 small onion

  • Mild curry powder – about a teaspoon or more if you want (1 tsp was perfect for a 1 year old).

  • Knob of butter

In a large saucepan, sauté the onion and garlic in the butter. Add the carrots and the curry powder.

The add your stock (play around with the amount of water you want to add, depending on how thick or how watery you like your soup). Leave to simmer until the carrots are soft. Transfer to a blender (I use the Nutribullet – amazing machine!) and blend!

I serve the girl’s soup with some milk in it to cool it down and mine with some pepper. Add a slice of homemade bread on the side and everyone is happy.

  3. This sounds delicious, I’d have to think of another name for it though, my youngest doesn’t like carrots, maybe calling it Superhero Soup would trick him into trying it!
