This year our wedding anniversary fell midweek, so while we treated ourselves to a truly memorable evening out the weekend before at The Old Convent in Tipperary, I wanted to mark the day itself and involve the girls. I try and do some baking with the two ladies at least once a week, it’s fun and productive. Usually when I make pizza I use my bread maker to create a proper dough with yeast which makes the most unbelievable pizza’s ever. I was caught short on time so I turned to my trusty Mary Berry cookbook for some inspiration and found these simple mini pizza’s made using shortcrust pastry. The recipe did not call for a heart shaped cookie cutter but hey!
These are so easy to create, it’s just a shortcrust base with tomato paste and whatever topping you like. I also like to add a few drops of pesto to my pizza bases. The girls loved these too and they’d make a great snack for lunch also.
They definitely don’t photograph all that beautifully when they are finished. Although there may have been some pretty ones but by the time I got to my camera this was the last guy left!
